The fermentation takes place into 2.600 liter containers; the temperature, raised initially to 10 °C, stabilizes at around 15 °C till the end of the process. The maceration is very long: it lasts over 40 days.
Ageing : Aged average of 24 months in oak barrels.
Alcohol content : 16 % Vol.

Appearance : Intense ruby red with garnet reflection
Aroma : Spicy and intense
Flavor : Full, round, warm and velvety. Slightly toasted final note.
