Roller crushing and destemming at a temperature between 24 and 28 °C. Long maceration with several remontages - to foster the release of extractable substances followed by separation, malolactic fermentation and pouring.
Ageing : Aged for at least 12 months in oak barrels.
Alcohol content : 13.5 Vol.
Appearance : Intense ruby red
Aroma : Spicy and intense
Flavor : Full, round and velvety
Recommended for robust entrees, with meat, game and wildfowl, braised dishes and strong cheeses (mature Grasso Monte).
